A photograph of five workers preparing jellied eels in the kitchen area of F. Cooke's eel pie and mash shop in Hackney. The tanks in the background hold live eels in the drawers, which are constantly filtered with fresh water. Eel pie shops were family businesses which opened new branches with every generation. A large empire was built up by the Cooke family with three still operating today in Hoxton, Broadway market and Shepherds Bush.
